Almond-Crusted Flaky Fish

Ingredients:

  • 3 Tbsp. Ghee (Clarified Butter)
  • 1/3 cup Almond Flour
  • 1 tsp. Ground Black Pepper
  • 1 tsp. Garlic Pepper
  • 1 tsp. Lemon Zest (finely grated peel)
  • 1 tsp. Kosher Salt
  • 1/2 cup Organic Half & Half or Silk®
  • Dairy Free Heavy Whipping Cream
  • 1 1/3 cup Finely Ground Whole
  • Almonds (with skin)
  • 1 cup Freshly Grated Parmesan or
  • Non-Dairy Alternative or Nutritional
  • Yeast
  • Optional: 1/2 tsp. Red Pepper Chili
  • Flakes
  • 2.25 lb. (Six – 6 oz.) Skinless Fish
  • Fillets

Directions:

Pre heat oven to 450 F. Add ghee to a rimmed baking sheet, using paper towels to evenly coat.

Step 1: Place three shallow bowls or pie plates on the counter. Add flour, both peppers, zest, and salt to one bowl; whisk to combine. Add half & half to another bowl. Add ground almonds, parmesan, and optional chili flakes to the last bowl.

Step 2: Dredge one fillet at a time first through flour mixture, shaking off any excess in the bowl. Next dip into the half & half, letting excess drip off into the bowl. Next dredge each fillet into the almond mixture, coating both sides. Transfer to the prepared baking sheet.

Step 3: Place baking sheet into the preheated oven to bake about 10 minutes or until one fillet flakes easily when tested with a fork.
