One-Pot Chicken Artichoke Cavatappi Recipe

Did you know it is National Artichoke Day?! 

We LOVE artichokes not only because of their taste, but also because you reap so many benefits from eating artichokes! Artichokes contain antioxidants that are linked with boosting liver health and function, contain special properties that help fight cancer, loaded with nutrients (Potassium, Fiber, Vitamin C, Folate, and more!), and aid in replacing LDL "bad" cholesterol for HDL "good" cholesterol. Not to mention.. low in calories! 

Our Chicken Artichoke Cavatappi is SO delicious and simple to make. This recipe only requires one pan which means only one pan for clean up... sign me up!

Tip: Prep all your ingredients before you start. This is a fairly quick recipe and you'll want to make sure your prepared for all the steps!

 

One-Pot Chicken Artichoke Cavatappi

Yields: 4 servings

 

Ingredients:

  • Olive oil
  • 1 14.5 oz can quartered artichoke hearts drained
  • 1 lb of chicken tenders
  • 1 1/2 tsp of salt
  • 1/4 tsp ground pepper
  • 1 small onion chopped
  • 2 tbsp chopped garlic
  • 1 tbsp chopped fresh oregano
  • 2 oz sun dired tomatoes, not in oil
  • 6 cups packed chopped kale
  • 2 tbsp fresh lemon juice
  • 8 oz cavatappi, whole wheat
  • 2 oz parmesan (optional)

 

Directions:

Step 1: Heat a large non-stick skillet over medium heat. Lightly mist pan with olive oil spray.

Step 2: Working in two batches, add artichokes and char until dark golden- 3 to 4 minutes. Remove to a plate.

Step 3: Season chicken with 1/2 tsp of salt and 1/4 tsp of pepper.

Step 4: Spray pan with more oil, add chicken to the pan and cook 5 minutes, turning half way through cooking. Transfer to a plate and set aside.

Step 5: Spray pan with additional oil, add onion, garlic, and 2 tsp oregano. Cook, stirring, until onions softened and golden, about 4 minutes.

Step 6: Stir in tomatoes and kale, sprinkle with 1 tsp salt and 1/2 tsp pepper.

Step 7: Add 2 tbsp lemon juice and 2 1/4 cups of water. Stir in cavatappi, cover and cook for 10 minutes.

Step 8: Cut chicken and artichoke. Reduce heat to medium-low, cover and cook for 5 minutes or until pasta is al dente and chicken is reheated.

Step 9: Top with parmesan if desired and enjoy!
