In the spirit of this week’s challenge of not eating “fried foods”, here is a delicious veggie side that will be devoured by kids and adults alike, you have to try air fryer carrot fries! These crispy sticks are finished with grated parmesan for an irresistible bite. 

We LOVE carrots not only are they a filling and tasty snack, but they are also a great source of beta carotene. Beta carotene converts into vitamin A which we need for good vision and eye health, for a strong immune system, and for healthy skin and mucous membranes. They are also considered healthier than potatoes because they’re lower in calories.

 

So next time you are craving a salty snack give this recipe a try!

 

Air Fryer Carrot Fries  

Yields: 4 servings

 

PREP TIME           COOK TIME             TOTAL TIME

 10 minutes            14 minutes                  24 minutes

 

INGREDIENTS

  • 4-5 carrots, peeled

  • 2 teaspoon cornstarch

  • ½ teaspoon parsley

  • ½ teaspoon garlic powder

  • ¼ teaspoon salt

  • 1 tablespoon olive oil

  • ½ tablespoon grated parmesan

INSTRUCTIONS

  1. Preheat your air fryer to 400 degrees F.

  2. Peel your carrots. Cut each carrot in half to make shorter fries. Then cut them lengthwise in half and then half them again lengthwise. They should all be about the same size for even cooking. 

  3. In a small bowl combine the cornstarch, parsley, garlic powder, and salt. Place your carrots in a dish and drizzle your olive oil over them. Next, sprinkle the seasoning over the carrots, mixing them till they are coated evenly. 

  4. Place them in a single layer in your air fryer basket. Cook for 13 to 15 minutes. They should be fork tender but hold their shape when held up. Let them rest for just a few minutes, allowing them to crisp up a little bit more. Place them on a plate and sprinkle with parmesan cheese. Serve immediately.
