Not So Sloppy Joe

Ingredients

  • 1 lb. Lean Ground Beef or Lean Ground Turkey Meat or Seitan
  • 1 1/2 tsp. Garlic, minced
  • 2 medium Carrots, peeled, shredded
  • 5 cup Baby Spinach or Kale Leaves
  • 14 oz. can Navy Beans, rinsed and drained
  • 14 oz. can Low Sodium Diced Tomatoes
  • 1 heaping Tbsp. Dijon or Brown Mustard
  • 1 Tbsp. + 1 tsp. Apple Cider Vinegar
  • 1 tsp. Splenda Brown Sugar or 2 tsp. Dark Brown Sugar
  • 1/3 cup Green Onions, chopped Head of Butter Lettuce “Cups”

Directions:

Heat a large saucepan (that has a lid) on med-high. Add meat; breaking up until crumbly. Brown until no longer pink.

Step 1: Add garlic, shredded carrot, and spinach to pan. Stir until spinach wilts. Add beans, tomatoes, mustard, cider and brown sugar. Cover pan, reduce heat to medium and simmer, stirring occasionally. The mixture should look saucy; about 10 minutes. Add green onions and stir to combine. Serve immediately or cool completely until ready to portion and refrigerate.

Yields: 4 cups mixture (increase or decrease as desired) 1/4 cup mixture = 1 unit protein

Complete Meal Portion:

2 Unit Portion:

  • 1/2 cup mixture
  • As many lettuce cups as you want
  • .5 oz. any brand baked crackers

3 Unit Portion:

  • 3/4 cup mixture
  • As many lettuce cups as you want
  • 1 oz. any brand baked crackers

4 Unit Portion:

  • 1 cup mixture
  • As many lettuce cups as you want 1
  • .5 oz. any brand baked crackers

5 Unit Portion:

  • 1 heaping cup mixture
  • As many lettuce cups as you want
  • 2 oz. any brand baked crackers
