Tex-Mex Cowboy Salad

Ingredients:

  • 1.5 lb. Ground Lean Turkey Meat
  • 1/2 15 oz. can Corn Kernels, rinsed
  • 16 oz. can Vegetarian Refried Black Beans
  • 14.5 oz. can Diced Tomatoes with Green Chiles
  • 7 oz. can Diced Green Chiles
  • 1 pack Low Sodium Taco Seasoning
  • 10 oz. bag Romaine Lettuce Leaves
  • 1/2 cup shredded Mexican Cheese Blend
  • 1 cup Jicama or Cucumber, diced
  • 1/2 average Avocado, thin slices
  • 1/4 cup your favorite Salsa
  • 9 Blue Tortilla Chips, slightly crushed

Directions:

Step 1: Heat a medium skillet over med-high. Add turkey and cook until no longer pink, breaking up with a spatula. Drain fat.

Step 2: Return skillet to stove; reduce heat to medium. Add the next 5 ingredients; thru taco seasoning. Cook for 10 minutes and slightly thickened.

Step 3: Add Romaine leaves to your salad bowl. Add remaining 5 ingredients; toss. To serve, place salad onto each plate. Top with Tex Mex turkey mixture.

Complete Meal Portions:

2 Unit Portion:

  • 2 cups salad
  • 1/2 cup tex mex turkey

3 Unit Portion:

  • 2 cups salad
  • 3/4 cup tex mex turkey

4 Unit Portion:

  • 3 cups salad
  • 1 level cup tex mex turkey

5 Unit Portion:

  • 3 cups salad
  • 1 heaping cup tex mex turkey
