Recipe of the Month: 4-Ingredient Peanut Butter Eggs

Staying on track with your fitness goals doesn’t mean skipping out on the holiday fun. These 4-Ingredient Peanut Butter Eggs are designed to satisfy your sweet tooth without the energy crash that comes from traditional Easter candy. Made with natural fats and antioxidant-rich dark chocolate, they’re a “guilt-free” upgrade to keep in your freezer.


  • ⅔ cup natural peanut butter* (just peanuts & salt)
  • 1 tbsp pure maple syrup
  • 2-3 tbsp coconut flour** (start with 2 and add another if necessary)
  • 3.5 ounces 72% dark chocolate bar, vegan if desired
  • Optional: Coarse sea salt, for sprinkling on top

  • Mix: In a bowl, combine peanut butter*, maple syrup, and 2 tbsp coconut flour until it reaches a sticky cookie dough consistency. Add 1 more tbsp of flour if too runny.
  • Shape: Use a cookie scoop to drop tablespoon-sized portions onto a parchment-lined tray. Flatten and shape into eggs with your fingers.
  • Chill: Freeze the shapes for 20–60 minutes until firm.
  • Coat: Melt chocolate over low heat; let cool slightly to room temperature (if chocolate is too warm, it may melt the peanut butter). Use a fork to dip each frozen egg into the chocolate, coating evenly.
  • Finish: Return to parchment, sprinkle with sea salt, and freeze for 30 minutes until hardened. Store in the fridge (or freezer for up to 3 months).

*Almond butter or cashew butter can be substituted, just be sure they are all natural with no added ingredients.
**Can substitute almond flour, but may require 1/4-1/3 cup to achieve correct consistency.
