Flavorful Chicken Stir-fry

Ingredients:

  • 5 Tbsp. Low Sodium Soy Sauce or Bragg’s Liquid Aminos or Coconut Aminos, divided
  • 2 Tbsp. Fresh Orange Juice, divided
  • 4 Tbsp. Rice Vinegar, divided
  • 4 tsp. Cornstarch or Arrowroot, divided
  • 1 lb. Chicken Tenders or Extra Firm Tofu or Plant-based Chicken Strips
  • 3 tsp. No Added Sugar Orange Marmalade or Apricot Preserves
  • 2 Tbsp. Avocado Oil, divided
  • 2 Tbsp. Garlic, minced
  • 1 1/2 Tbsp. Fresh Ginger, peeled, minced
  • 1/2 cup Roasted Peanuts or Cashews, chopped small
  • 2 Green Onions, thinly sliced
  • 4 cups (12.6 oz.) Broccoli Florets
  • 2 cups (1 lb.) Snow or Sugar Snap Peas (frozen ok)
  • 1/2 cup Packed Fresh Basil or Cilantro Leaves, roughly torn
  • Basmati Brown Rice

Directions:

Step 1: Whisk together 2 Tbsp. soy sauce, 1 Tbsp. orange juice, 1 Tbsp. vinegar, and 2 tsp. cornstarch in a medium bowl. Add any of the protein options to marinate; set aside.

Step 2: In another small bowl, whisk together 3Tbsp. soy sauce, 3 Tbsp. vinegar, 2 tsp. cornstarch, and preserves; set aside.

Step 3: Heat 1 Tbsp. oil in a Wok or large skillet over high until oil is shimmering. Add marinated chicken or tofu strips in a single layer. Cook 1 – 2 min. or until golden, flip and repeat. Transfer to a waiting plate.

Step 4: Using the same wok or skillet, add remaining Tbsp. oil. Add minced garlic, ginger, peanuts, and green onions; cook 30 seconds. Add broccoli florets and remaining Tbsp. orange juice. Quickly cover to trap steam 2 – 3 min.-broccoli should be bright green but tender-crisp.

Step 5: Add snow peas. Return chicken along with any accumulated juices on the plate. Cook, gently stirring and scraping up any brown bits for 2 – 3 min., or until the sauce has thickened. If you prefer it to be thicker, whisk in (1 tsp. at a time) additional cornstarch. Remove wok from heat. Stir in basil or cilantro leaves. Serve with suggested portion of brown rice.

  • 1/3 cup cooked rice
  • 1 1/3 cup stir-fry

  • 1/2 cup cooked rice
  • 1 1/2 cup stir-fry

5 Unit Portion:

  • 1/2 cup cooked rice
  • 1 3/4 cup stir fry
