Recipe of the Month: Loaded Taco Sweet Potato Sliders

Meals like this make it easy to stay consistent. Protein is covered, portions are built in, and you’re getting energy without overcomplicating it.


  • 3 medium sweet potatoes, sliced into ½ inch rounds → yields ~15 slices (these are your “buns”)
  • Avocado oil
  • 1.5 lbs (680g) 92% lean ground beef
  • 2 tsp taco seasoning
  • ¼ tsp chipotle powder (optional for spice)
  • 1 jalapeño, minced
  • 2 cloves garlic, minced
  • ½ tsp sea salt

Per Serving (3 Sliders)
Calories: ~320–350
Protein: ~24–26g
Carbohydrates: ~30–34g
Fat: ~10–12g

  • Preheat oven to 425°F and line a large baking sheet with parchment paper.
  • Lightly brush both sides of each sweet potato round with oil and place on baking sheet, spaced apart. Roast for 15 minutes, flip, then roast another 10–15 minutes until soft and lightly browned.
  • In a mixing bowl, combine ground beef, taco seasoning, chipotle powder, minced jalapeño, garlic, and salt. Form into ~15 small patties (≈ 45g raw weight).
  • Heat a large skillet over medium-high heat and lightly coat with cooking oil. Cook patties for 2-3 minutes per side, or until desired doneness.
  • Place each sweet potato round on a serving platter and top with a cooked patty. Top with Guacamole and cilantro, if desired.
