Perfectly Peachy Muffins


  • 1 cup White Whole Wheat Flour
  • 1 cup Old Fashioned Oats
  • 1/4 cup Splenda Brown Sugar or
  • 1/2 cup Brown Sugar or
  • 1/3 cup Coconut Sugar
  • 2 tsp. Baking Powder
  • 1/2 tsp. Cinnamon
  • 1/2 cup (1 stick) Unsalted Butter,
  • melted/cooled
  • 1 cup Low Fat Sour Cream
  • 1 Large Egg, beaten
  • 1 cup Chopped Peaches, pitted/peeled
  • Avocado Oil Cooking Spray or Paper
  • Muffin Liners


Step 1: Pre heat oven to 400 F Spray or line a 12 cup muffin tin with avocado oil or paper cups.

Using a whisk, mix first 5 dry ingredients, (thru cinnamon) in a large bowl until combined. Make a well in the center.

Step 2: In another medium bowl, whisk melted butter, sour cream and egg. Pour mixture into the well of the dry ingredients. Gently stir to combine. Fold in chopped peaches. Do not over-mix.

Step 3: Using a measuring cup or measuring scooper; scoop muffin batter into prepared muffin tins. Sprinkle each with a pinch of oats. Place into center of pre heated oven and bake for 16 – 18 minutes. Remove from oven to a waiting wire rack. After 5 minutes remove from muffin tins to completely cool before storing. Refrigerate.
